Bananarama Coconut Ice-cream
The weather is warming up and everyone’s licking ice cream already!
This recipe is a perfect dairy and sugar free ice-cream alternative and tastes creamy and delicious.
Inspired by a mum who attended one of the Kids Snacks and Treats workshops (thanks Paulette!), this takes 5 mins to make – for many moments of frozen pleasures. Do try this at home and your kids will think you are the best mum ever!
Ingredients:
-1 x 400g can of coconut milk (find a brand in your local health food shop that contains nothing but coconut milk, no gums, no additives)
-3 ripe bananas
-1 cup activated nut flour (I used a mix of almond and walnut)
-1 tbsp. maple syrup (optional)
How to:
Blend all ingredients in a food processor, pour into popsicle moulds and freeze.
That’s it! Easy.
